- 4 cups frozen Tater Tots
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 2 tablespoons chopped green onions
- 1/2 pound breakfast sausage
- 2 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven as directed on Tater Tot packaging. Arrange frozen Tater Tots in a single layer on a baking sheet and bake for 20 to 25 minutes until crisp and golden. Remove from oven and set aside.
- In a skillet over medium heat, render breakfast sausage, breaking it apart until browned and fully cooked. Sprinkle all-purpose flour over the cooked sausage and stir to coat evenly; cook for 1 to 2 minutes to remove flour taste.
- Gradually pour in whole milk while stirring continuously. Simmer until the mixture thickens, about 5 minutes. Season with salt and black pepper. Remove from heat and keep warm.
- In a nonstick skillet over medium heat, scramble the eggs until cooked through and set. Remove from heat.
- Divide the baked Tater Tots among individual bowls. Top each with scrambled eggs, spoonfuls of sausage gravy, and a sprinkle of shredded cheddar cheese.
- Garnish each bowl with chopped green onions if desired. Serve immediately while hot.
Notes
- For a spicy twist, add hot sauce to the sausage gravy.
- This dish can be customized with additional toppings like diced tomatoes or avocado.
- Leftover sausage gravy can be stored in the refrigerator for up to 3 days.
