Description

Ingredients

  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions
  • 1/2 pound breakfast sausage
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven as directed on Tater Tot packaging. Arrange frozen Tater Tots in a single layer on a baking sheet and bake for 20 to 25 minutes until crisp and golden. Remove from oven and set aside.
  2. In a skillet over medium heat, render breakfast sausage, breaking it apart until browned and fully cooked. Sprinkle all-purpose flour over the cooked sausage and stir to coat evenly; cook for 1 to 2 minutes to remove flour taste.
  3. Gradually pour in whole milk while stirring continuously. Simmer until the mixture thickens, about 5 minutes. Season with salt and black pepper. Remove from heat and keep warm.
  4. In a nonstick skillet over medium heat, scramble the eggs until cooked through and set. Remove from heat.
  5. Divide the baked Tater Tots among individual bowls. Top each with scrambled eggs, spoonfuls of sausage gravy, and a sprinkle of shredded cheddar cheese.
  6. Garnish each bowl with chopped green onions if desired. Serve immediately while hot.
