- 3 tablespoons honey
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon finely grated lime zest
- 2 cloves garlic, minced
- 1 teaspoon ground cumin

- 1 cup jasmine rice
- 2 cups chicken broth
- 2 ripe avocados, diced
- 1 small red onion, finely chopped
- 0.25 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- 4 lime wedges
Instructions
- In a mixing bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and black pepper until thoroughly combined.
- Arrange the chicken breasts in a shallow dish or resealable bag. Pour the marinade over the chicken, ensuring each piece is well coated. Cover and refrigerate for 30 minutes to 2 hours.
- Rinse jasmine rice under cold running water until the water is clear. Bring chicken broth to a boil in a saucepan, add the rice, cover, reduce heat, and simmer for 15 minutes, or until the rice is tender and liquid is absorbed.
- Preheat grill to medium-high heat. Remove the chicken from the marinade and discard excess. Grill the chicken breasts for 6 to 7 minutes per side, or until fully cooked and juices run clear. Rest briefly before slicing.
- Combine diced avocado, finely chopped red onion, chopped cilantro, and olive oil in a bowl. Gently toss to coat, being careful not to mash the avocado.
- On individual plates, arrange a layer of jasmine rice, followed by sliced grilled chicken. Spoon the avocado mixture on top.
- Serve each stack with a fresh lime wedge for squeezing over just before eating.
