  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 2 ripe avocados, diced
  • 1 small red onion, finely chopped
  • 0.25 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 4 lime wedges

Instructions

  1. In a mixing bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and black pepper until thoroughly combined.
  2. Arrange the chicken breasts in a shallow dish or resealable bag. Pour the marinade over the chicken, ensuring each piece is well coated. Cover and refrigerate for 30 minutes to 2 hours.
  3. Rinse jasmine rice under cold running water until the water is clear. Bring chicken broth to a boil in a saucepan, add the rice, cover, reduce heat, and simmer for 15 minutes, or until the rice is tender and liquid is absorbed.
  4. Preheat grill to medium-high heat. Remove the chicken from the marinade and discard excess. Grill the chicken breasts for 6 to 7 minutes per side, or until fully cooked and juices run clear. Rest briefly before slicing.
  5. Combine diced avocado, finely chopped red onion, chopped cilantro, and olive oil in a bowl. Gently toss to coat, being careful not to mash the avocado.
  6. On individual plates, arrange a layer of jasmine rice, followed by sliced grilled chicken. Spoon the avocado mixture on top.
