Description

Taco Loaded Baked Potatoes are a delicious combination of fluffy baked potatoes topped with seasoned ground beef, cheddar cheese, sour cream, green onions, and fresh tomatoes.


Ingredients

  • 1 pound ground beef (90% lean)
  • 4 to 6 medium Russet potatoes
  • 1 ounce packet of taco mix
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • ½ cup diced tomatoes

Instructions

  1. Clean potatoes thoroughly and poke several times with a fork.
  2. Cook them at 400°F (200°C) for about 45-50 minutes until they’re soft when poked.
  3. Put ground beef in a skillet over medium heat and cook until no pink remains. Pour off any fat.
  4. Add taco mix and ½ cup water to the meat. Let it bubble for 5 minutes until it gets thick.
  5. Cut the hot potatoes lengthwise and mash the insides gently with a fork.
  6. Load them up with your seasoned beef.
  7. Add cheese, a dollop of sour cream, green onions, and tomatoes on top.
  8. Dig in while it’s hot!

Notes

  • Feel free to customize toppings according to your preferences.
  • For a vegetarian option, substitute ground beef with black beans or lentils.
  • Leftover beef mixture can be stored in the refrigerator for up to 3 days.
