- 1 cup sugar
- 1 cup light brown sugar, packed
- 1 cup vegetable oil or melted butter
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 cups chopped pecans
Instructions
- Preheat Oven: Heat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper to prevent sticking.
- Mix Wet Ingredients: In a large mixing bowl, whisk together the sugar, light brown sugar, vegetable oil or melted butter, and eggs until the mixture is smooth and well combined.
- Combine Dry Ingredients: In a separate bowl, stir together all-purpose flour, baking powder, and salt until evenly mixed.
- Combine & Fold: Gradually add the dry ingredient mixture into the wet mixture, folding gently until just combined to avoid overmixing. Stir in the vanilla extract evenly.
- Add Pecans: Fold in the chopped pecans carefully to distribute them evenly throughout the batter.
- Bake: Pour and spread the batter evenly into the prepared baking dish. Place in the oven and bake for 35 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- Cool & Serve: Remove from oven and allow the pecanbread to cool completely in the pan. Once cooled, slice into squares and serve at room temperature or slightly warm for best texture and flavor.
Notes
- For a richer flavor, toasted pecans can be used.
- This recipe can be easily doubled and baked in a larger pan.
