Description

Irresistibly delicious brownies made with sourdough discard and creamy peanut butter.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup semisweet chocolate chips or chopped chocolate
  • 1/2 cup sourdough discard (unfed)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon fine sea salt
  • 1/3 cup creamy peanut butter
  • 1 tablespoon powdered sugar (optional)

Instructions

  1. Preheat oven to 350°F. Line an 8×8 inch square baking pan with parchment paper.
  2. In a microwave-safe bowl, combine butter and chocolate chips. Heat in 30-second intervals, stirring between each burst until completely melted and smooth. Allow to cool for 3 minutes.
  3. In a large mixing bowl, whisk together sourdough discard, granulated sugar, eggs, and vanilla extract until fully incorporated.
  4. Pour the cooled chocolate mixture into the wet ingredients bowl and whisk until the batter becomes smooth and homogeneous.
  5. Sift flour, cocoa powder, and salt into the batter. Fold gently with a spatula until just combined, avoiding overmixing.
  6. Transfer batter into the prepared pan and smooth the surface evenly.
  7. In a small bowl, combine peanut butter with powdered sugar if desired. Drop spoonfuls of the peanut butter mixture across the brownie batter. Using a skewer or knife, gently swirl the peanut butter into the batter in decorative patterns.
  8. Bake for 28 to 32 minutes until the center is just set. A toothpick inserted should emerge with moist crumbs, not wet batter.
  9. Allow brownies to cool completely in the pan before cutting into 16 equal squares.

Notes

  • For a richer chocolate flavor, use dark chocolate chips.
  • Make sure to not overmix the batter to keep the brownies fudgy.
  • Experiment with different nut butters for a unique twist.
