Irresistibly delicious brownies made with sourdough discard and creamy peanut butter.

- 1/2 cup unsalted butter
- 1 cup semisweet chocolate chips or chopped chocolate
- 1/2 cup sourdough discard (unfed)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon fine sea salt
- 1/3 cup creamy peanut butter
- 1 tablespoon powdered sugar (optional)
Instructions
- Preheat oven to 350°F. Line an 8×8 inch square baking pan with parchment paper.
- In a microwave-safe bowl, combine butter and chocolate chips. Heat in 30-second intervals, stirring between each burst until completely melted and smooth. Allow to cool for 3 minutes.
- In a large mixing bowl, whisk together sourdough discard, granulated sugar, eggs, and vanilla extract until fully incorporated.
- Pour the cooled chocolate mixture into the wet ingredients bowl and whisk until the batter becomes smooth and homogeneous.
- Sift flour, cocoa powder, and salt into the batter. Fold gently with a spatula until just combined, avoiding overmixing.
- Transfer batter into the prepared pan and smooth the surface evenly.
- In a small bowl, combine peanut butter with powdered sugar if desired. Drop spoonfuls of the peanut butter mixture across the brownie batter. Using a skewer or knife, gently swirl the peanut butter into the batter in decorative patterns.
- Bake for 28 to 32 minutes until the center is just set. A toothpick inserted should emerge with moist crumbs, not wet batter.
- Allow brownies to cool completely in the pan before cutting into 16 equal squares.
Notes
- For a richer chocolate flavor, use dark chocolate chips.
- Make sure to not overmix the batter to keep the brownies fudgy.
- Experiment with different nut butters for a unique twist.
