- 1 package (9 oz) chocolate sandwich cookies, crushed
- 1/4 cup unsalted butter, melted
- 1 container (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 container (8 oz) frozen whipped topping, thawed
- 1 package (3.4 oz) instant vanilla pudding mix
- 2 cups cold milk
- 1 teaspoon peppermint extract
- 4 drops green food coloring
- 1 cup mini chocolate chips
- Whipped cream and chocolate syrup for garnish (optional)
Instructions
- In a medium bowl, combine crushed chocolate sandwich cookies and melted butter. Press the mixture evenly into the bottom of a 9×13-inch dish to form the crust.
- In a large bowl, beat cream cheese and powdered sugar until smooth.
- Fold half of the whipped topping into the cream cheese mixture until well combined.
- Spread the cream cheese mixture over the cookie crust evenly.
- In another bowl, whisk together pudding mix, cold milk, peppermint extract, and green food coloring until thickened.
- Gently fold the remaining whipped topping and mini chocolate chips into the pudding mixture.
- Spread the pudding layer over the cream cheese layer in the dish.
- Cover and refrigerate for at least 4 hours or until set.
- Before serving, garnish with whipped cream and drizzle with chocolate syrup if desired.
Notes
- For a stronger mint flavor, increase the peppermint extract slightly.
- Ensure the crust is tightly packed for better structure.
- This dessert can be made a day ahead for convenience.
