Description

Indulge in these delicious Reese’s Sweet Rolls filled with creamy peanut butter and topped with chocolate.

Ingredients

Scale
  • 1 cup 2% milk at 110-115ºF
  • 2 1/4 teaspoons instant yeast
  • 2 large eggs room temperature
  • 1/2 cup salted butter melted, but not too hot
  • 1/2 cup granulated sugar
  • 44 1/2 cups bread flour (520 grams)
  • 1 teaspoon salt
  • 1/2 cup salted butter room temperature (for filling)
  • 1 cup creamy peanut butter (for filling)
  • 3 tablespoons 2% milk (for filling)
  • 2 cups powdered sugar (for filling)
  • 20 Reese’s peanut butter cups chopped (for filling)
  • 1/2 cup heavy cream warmed (for soaking)
  • 1/3 cup creamy peanut butter (for topping)
  • 1/3 cup semi-sweet chocolate chips (for topping)

Instructions

  1. Pour the warm milk in the bowl of a stand mixer and sprinkle the yeast overtop. Allow this to sit for 3-4 minutes until frothy.
  2. Add the eggs, butter, and sugar. Mix until combined.
  3. Add the salt and 4 cups of flour and mix just until barely combined. Allow to rest for 5 minutes.
  4. Scrape the dough off the beater blade and use the dough hook to knead on medium speed for 5-7 minutes, adding more flour if necessary until elastic and smooth.
  5. Spray a large bowl with cooking spray, place the dough in the bowl, cover, and let it rise until doubled (about 30 minutes).
  6. Prepare the peanut butter cream filling by mixing room temperature butter, peanut butter, milk, and powdered sugar in a bowl until well combined.
  7. Turn the risen dough out onto a floured surface, roll into a 24×15 rectangle, and spread the peanut butter cream filling over the dough. Sprinkle with chopped Reese’s cups.
  8. Roll the dough tightly from the long side and cut into 12 slices, placing in a greased 9×13 baking pan. Let rise for 20 minutes while preheating the oven to 375ºF.
  9. Warm the heavy cream and pour over the rolls, then bake for 25-30 minutes until golden brown.
  10. Microwave the peanut butter and chocolate chips for topping, drizzle over the baked rolls, and sprinkle with additional chopped Reese’s cups if desired.

Notes

  • Ensure the yeast is activated by allowing it to froth in the warm milk.
  • Do not over-flour the dough; it should be tacky.
  • Watch the rolls closely while baking to prevent over-browning.
