Ingredients
Scale
- 1 cup 2% milk at 110-115ºF
- 2 1/4 teaspoons instant yeast
- 2 large eggs room temperature
- 1/2 cup salted butter melted, but not too hot
- 1/2 cup granulated sugar
- 4 – 4 1/2 cups bread flour (520 grams)
- 1 teaspoon salt
- 1/2 cup salted butter room temperature (for filling)
- 1 cup creamy peanut butter (for filling)
- 3 tablespoons 2% milk (for filling)
- 2 cups powdered sugar (for filling)
- 20 Reese’s peanut butter cups chopped (for filling)
- 1/2 cup heavy cream warmed (for soaking)
- 1/3 cup creamy peanut butter (for topping)
- 1/3 cup semi-sweet chocolate chips (for topping)
Instructions
- Pour the warm milk in the bowl of a stand mixer and sprinkle the yeast overtop. Allow this to sit for 3-4 minutes until frothy.
- Add the eggs, butter, and sugar. Mix until combined.
- Add the salt and 4 cups of flour and mix just until barely combined. Allow to rest for 5 minutes.
- Scrape the dough off the beater blade and use the dough hook to knead on medium speed for 5-7 minutes, adding more flour if necessary until elastic and smooth.
- Spray a large bowl with cooking spray, place the dough in the bowl, cover, and let it rise until doubled (about 30 minutes).
- Prepare the peanut butter cream filling by mixing room temperature butter, peanut butter, milk, and powdered sugar in a bowl until well combined.
- Turn the risen dough out onto a floured surface, roll into a 24×15 rectangle, and spread the peanut butter cream filling over the dough. Sprinkle with chopped Reese’s cups.
- Roll the dough tightly from the long side and cut into 12 slices, placing in a greased 9×13 baking pan. Let rise for 20 minutes while preheating the oven to 375ºF.
- Warm the heavy cream and pour over the rolls, then bake for 25-30 minutes until golden brown.
- Microwave the peanut butter and chocolate chips for topping, drizzle over the baked rolls, and sprinkle with additional chopped Reese’s cups if desired.
Notes
- Ensure the yeast is activated by allowing it to froth in the warm milk.
- Do not over-flour the dough; it should be tacky.
- Watch the rolls closely while baking to prevent over-browning.
