Ingredients

- 50 g rolled oats
- 240 g almond butter
- 42 g honey
- 30 g vanilla protein powder
- 0.25 tsp peppermint extract
- 40 g mini dark chocolate chips
- 15–30 ml unsweetened almond milk (as needed)
Instructions
- In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly until well blended.
- If the mixture appears too dry, incorporate almond milk one tablespoon at a time, mixing after each addition, until a cohesive, pliable dough forms.
- Gently fold mini dark chocolate chips into the dough until evenly distributed.
- Portion the mixture using a tablespoon and roll between your palms to form uniform balls. Repeat until all of the mixture is used.
- Arrange the balls on a baking sheet lined with parchment paper. Refrigerate for at least 20 minutes to allow them to firm up.
- Transfer the chilled protein balls to an airtight container and store in the refrigerator for up to seven days.
Notes
- Feel free to adjust the amount of almond milk based on the desired consistency of the dough.
- These protein balls can be customized with other mix-ins like nuts or dried fruit.
