Description

A delicious Mediterranean Chicken Zucchini Bake that’s healthy and packed with flavors.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted
  • ¼ cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts on both sides with salt, pepper, oregano, basil, and paprika.
  3. Place the seasoned chicken breasts in a baking dish. Arrange the zucchini slices, cherry tomatoes, Kalamata olives, and minced garlic around the chicken.
  4. Drizzle the olive oil evenly over the chicken and vegetables.
  5. Cover the baking dish with foil and bake for 20 minutes. Remove the foil, sprinkle the feta cheese over the chicken, and return to the oven for another 10–15 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
  6. Remove from the oven, garnish with fresh parsley, and serve hot with your favorite side dish.
