Description

A delicious Mediterranean Chicken Zucchini Bake that combines tender chicken breasts with fresh zucchini and herbs, topped with cheese for a delightful meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 medium zucchini, sliced into rounds or half-moons
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/3 cup grated Parmesan or crumbled feta cheese
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the oven: Set the oven to 375°F and lightly grease a 9×13-inch baking dish with olive oil or cooking spray.
  2. Season the chicken: Season chicken breasts evenly with salt, pepper, and half of the oregano, basil, and thyme. Optionally, pound chicken to an even thickness for consistent cooking.
  3. Prepare the zucchini mixture: In a large bowl, combine zucchini slices with olive oil, minced garlic, lemon juice, lemon zest, and the remaining oregano, basil, and thyme. Season with salt and pepper.
  4. Assemble the dish: Arrange the seasoned chicken breasts in the center of the prepared baking dish and spread the seasoned zucchini around the chicken in an even layer.
  5. Bake in the oven: Place the baking dish in the oven and bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F.
  6. Add cheese and finish baking: If using cheese, sprinkle Parmesan or feta over the chicken and zucchini during the last 5 minutes of baking, allowing it to melt.
  7. Rest and serve: Remove from the oven and let the chicken rest for 5 to 10 minutes before slicing. Serve with roasted zucchini, garnished with extra herbs or a drizzle of olive oil if desired.
