- 4 boneless, skinless chicken breasts
- 3 medium zucchini, sliced into rounds or half-moons
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 1 lemon, juiced and zested
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1/3 cup grated Parmesan or crumbled feta cheese
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat the oven: Set the oven to 375°F and lightly grease a 9×13-inch baking dish with olive oil or cooking spray.
- Season the chicken: Season chicken breasts evenly with salt, pepper, and half of the oregano, basil, and thyme. Optionally, pound chicken to an even thickness for consistent cooking.
- Prepare the zucchini mixture: In a large bowl, combine zucchini slices with olive oil, minced garlic, lemon juice, lemon zest, and the remaining oregano, basil, and thyme. Season with salt and pepper.
- Assemble the dish: Arrange the seasoned chicken breasts in the center of the prepared baking dish and spread the seasoned zucchini around the chicken in an even layer.
- Bake in the oven: Place the baking dish in the oven and bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F.
- Add cheese and finish baking: If using cheese, sprinkle Parmesan or feta over the chicken and zucchini during the last 5 minutes of baking, allowing it to melt.
- Rest and serve: Remove from the oven and let the chicken rest for 5 to 10 minutes before slicing. Serve with roasted zucchini, garnished with extra herbs or a drizzle of olive oil if desired.
