- ½ cup powdered sugar
- 8 ounces Cool Whip, thawed
- 1 lemon, juiced
- ¼ teaspoon lemon extract (optional)
- 3 cups mini marshmallows
- 18 ounces fresh blueberries
- Fresh lemon slices for garnish (optional)
Instructions
- Use a hand mixer on medium-high speed to beat the cream cheese and powdered sugar in a large bowl until smooth.
- Fold in the Cool Whip, lemon juice, and lemon extract gently with a rubber spatula until well combined.
- Add the fresh blueberries and marshmallows, and fold everything together until coated in the cream mixture.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour.
- Just before serving, garnish with fresh lemon slices and extra blueberries if desired.
