- 2 medium green cabbages
- 2 tablespoons olive oil or butter
- Salt, to taste
- Freshly ground black pepper, to taste
- 340 grams smoked sausage (andouille or kielbasa), sliced
- 225 grams shrimp, peeled and deveined
- 80 grams onion, finely chopped
- 80 grams red and green bell peppers, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil or bacon fat
- 1 teaspoon Cajun seasoning
- 0.5 teaspoon paprika
- 0.5 teaspoon garlic powder
- 0.25 teaspoon cayenne pepper (optional)
- 60 grams shredded mozzarella or cheddar cheese (optional)
Instructions
- Preheat oven to 190°C. Slice the tops off of each cabbage and carefully core the centers to create bowls for filling.
- Rub the inside of each cored cabbage with olive oil, salt, and black pepper. Arrange cabbages in a baking dish.
- Heat olive oil or bacon fat in a skillet over medium heat. Sauté onion, bell peppers, and garlic until softened, about 3–5 minutes.
- Add smoked sausage slices to the pan. Cook until lightly browned. Sprinkle in the Cajun seasoning, paprika, garlic powder, and cayenne (if using). Season to taste with salt and pepper.
- Add shrimp to the skillet and cook until pink and opaque, approximately 2–3 minutes.
- Spoon the shrimp and sausage filling into each cabbage bowl. If desired, sprinkle shredded cheese inside before finishing with filling.
- Cover the baking dish loosely with foil. Bake for 40–50 minutes, until the cabbage is tender.
- Remove foil and bake uncovered for an additional 10 minutes to achieve a caramelized finish.
- Garnish with chopped parsley or green onions before serving. Slice wedges from the cabbage bowls and serve warm.

- The cayenne pepper is optional; adjust to your spice preference.
- Feel free to use different types of cheese based on your preference.
- This dish can be prepared ahead of time and stored in the fridge before baking.
