- 450 grams carrots, peeled and sliced
- 450 grams green beans, trimmed
- 30 milliliters olive oil
- 60 milliliters honey
- 30 milliliters freshly squeezed lemon juice
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Set oven to 200°C and allow to fully preheat.
- In a large mixing bowl, combine carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and black pepper. Toss thoroughly until all vegetables are evenly coated.
- Spread the coated vegetables out in a single layer on a baking tray.
- Roast in the preheated oven for 20 to 25 minutes. Midway through cooking, stir the vegetables to promote even roasting. Continue until carrots are tender and caramelized, and green beans are tender-crisp.
- Remove vegetables from oven, transfer to a serving dish, and sprinkle with chopped fresh parsley.
- Present the dish while hot.
