Description

A deliciously moist and sweet Hawaiian Pineapple Cake, perfect for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter
  • 1 cup crushed pineapple, drained
  • 3 large eggs
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the crushed pineapple and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Pour the batter into a greased cake pan and smooth the top.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • Make sure to drain the crushed pineapple well to prevent the cake from becoming too moist.
  • You can frost the cake with cream cheese icing for added flavor.
