Ingredients

  • 1 teaspoon vanilla extract
  • 1/4 cup lemon-lime soda (such as Sprite or 7UP)

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup rainbow sprinkles
  • 1/3 cup granulated sugar
  • 1/4 cup all-purpose flour (for streusel)
  • 2 tablespoons unsalted butter, melted (for streusel)
  • 1 tablespoon lemon-lime soda (for streusel)
  • Pinch of salt (for streusel)
  • 2 tablespoons rainbow sprinkles (for streusel)

Instructions

  1. Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together melted butter and brown sugar until smooth. Add egg and vanilla extract and whisk until fully incorporated.
  3. Stir lemon-lime soda into the wet mixture until evenly combined.
  4. In a separate bowl, whisk flour, baking powder, and salt together. Gradually fold dry ingredients into wet mixture until just combined. Avoid overmixing.
  5. Gently fold rainbow sprinkles into the batter.
  6. Transfer batter into prepared pan, smoothing surface evenly.
  7. In a small bowl, combine granulated sugar, flour, melted butter, lemon-lime soda, and a pinch of salt. Mix with a fork until crumbly, then stir in sprinkles.
  8. Scatter the streusel evenly over the batter. Bake for 26–28 minutes, or until edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool completely in the pan on a wire rack. Lift out using parchment paper and cut into 16 bars.
