Delicious and colorful Funfetti Soda Streusel Blondies that are perfect for any occasion!

- 1/2 cup unsalted butter, melted and slightly cooled
- 1 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup lemon-lime soda (such as Sprite or 7UP)
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup rainbow sprinkles
- 1/3 cup granulated sugar
- 1/4 cup all-purpose flour (for streusel)
- 2 tablespoons unsalted butter, melted (for streusel)
- 1 tablespoon lemon-lime soda (for streusel)
- Pinch of salt (for streusel)
- 2 tablespoons rainbow sprinkles (for streusel)
Instructions
- Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a medium bowl, whisk together melted butter and brown sugar until smooth. Add egg and vanilla extract and whisk until fully incorporated.
- Stir lemon-lime soda into the wet mixture until evenly combined.
- In a separate bowl, whisk flour, baking powder, and salt together. Gradually fold dry ingredients into wet mixture until just combined. Avoid overmixing.
- Gently fold rainbow sprinkles into the batter.
- Transfer batter into prepared pan, smoothing surface evenly.
- In a small bowl, combine granulated sugar, flour, melted butter, lemon-lime soda, and a pinch of salt. Mix with a fork until crumbly, then stir in sprinkles.
- Scatter the streusel evenly over the batter. Bake for 26–28 minutes, or until edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
- Cool completely in the pan on a wire rack. Lift out using parchment paper and cut into 16 bars.
Notes
- Store bars in an airtight container at room temperature for up to 3 days.
- For a more intense flavor, try adding lemon zest to the batter.
