- 8 boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 onion, thinly sliced
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons mirin
- 2 tablespoons toasted sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon avocado oil
- 1 garlic clove, minced
- ½ inch fresh ginger, peeled and grated
- 1 tablespoon gochujang paste (omit for mild version)
Instructions
- Combine sliced onion, soy sauce, brown sugar, mirin, sesame oil, rice vinegar, avocado oil, minced garlic, grated ginger, and gochujang paste in a large bowl. Add chicken thigh pieces and mix thoroughly to coat. Marinate for at least 30 minutes.
- Heat a large skillet or wok over medium-high heat. Add the marinated chicken mixture and stir-fry for approximately 12 minutes, ensuring the chicken is cooked through and the sauce becomes caramelized.
- Preheat the air fryer to 195°C on air fry mode. Place the chicken and marinade in the air fryer basket. Cook for 25 minutes, turning occasionally for an even caramelized exterior.
Notes
- For a milder version, omit the gochujang paste.
- Make sure the chicken is cut into uniform pieces for even cooking.
- Marinating the chicken for longer enhances the flavor.
