Description

A delightful and colorful Easter Bunny Pastel Layer Cake, perfect for celebrating the holiday with family and friends.

Ingredients

Scale
  • 1 box (15.25 oz) white cake mix
  • Ingredients listed on the box (typically 3 eggs, ½ cup oil, 1 cup water)
  • Gel food coloring: blue, pink, yellow
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold whole milk
  • 16 oz whipped topping (Cool Whip), fully thawed
  • 12 bunny Peeps (white or pastel)
  • 1 cup pastel mini marshmallows
  • 610 pastel candy eggs
  • Optional: light pastel sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch metal baking pan by greasing it and lining the bottom with parchment paper.
  2. In a large mixing bowl, prepare the white cake mix according to package instructions, mixing until just combined.
  3. Divide the batter into three bowls and tint each with gel food coloring: blue, pink, and yellow.
  4. Pour the blue batter into the pan, followed by the pink batter, and then the yellow batter, spreading gently to keep layers distinct.
  5. Bake for 28–35 minutes until a toothpick comes out clean. Let the cake cool completely in the pan.
  6. Prepare the stabilized whipped frosting by whisking the pudding mix with cold milk until thick and folding in the whipped topping.
  7. Spread a generous layer of frosting over the cooled cake, creating swirls for a cloud-like effect.
  8. Decorate with pastel mini marshmallows, pastel candy eggs, and place a bunny Peep in the center.
  9. Refrigerate the cake for 1–2 hours before slicing to firm the frosting and maintain clean layer separation.

Notes

  • To achieve soft pastel tones, add gel food coloring gradually.
  • A kitchen scale can help ensure equally divided batter.
  • Do not open the oven during the first 20 minutes of baking.
  • For clean cuts, dip the knife in hot water before slicing.
