Description

A flavorful and creamy dish featuring bowtie pasta, chicken, and broccoli, all coated in a zesty cowboy butter sauce.

Ingredients

Scale
  • 450 g boneless, skinless chicken breasts, cut into bite-sized pieces
  • 340 g farfalle (bowtie) pasta
  • 2 cups broccoli florets
  • 1 tsp Cajun seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • 0.5 tsp crushed red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 2 tbsp olive oil
  • 85 g unsalted butter
  • 50 g grated Parmesan cheese, plus extra for serving
  • 120 ml reserved pasta water, as needed

Instructions

  1. Bring a large pot of salted water to a boil. Add farfalle pasta and cook until al dente according to package directions. In the final 3 minutes of cooking, add broccoli florets. Reserve 120 ml of pasta water, then drain and set aside.
  2. In a bowl, toss the chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper to coat evenly.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6–7 minutes, turning occasionally, until golden and cooked through. Transfer chicken to a plate and set aside.
  4. In the same skillet, melt butter over medium heat. Add garlic and sauté for 1–2 minutes until aromatic. Stir in crushed red pepper flakes, Dijon mustard, lemon juice, and zest. Incorporate parsley and chives, seasoning with salt and black pepper.
  5. Return pasta, broccoli, and chicken to the skillet. Toss everything in the sauce, adding reserved pasta water to achieve desired consistency. Stir in grated Parmesan until the sauce is creamy and coats the ingredients well.
  6. Serve warm, garnished with extra Parmesan, fresh parsley, and a squeeze of lemon juice if desired.

Notes

  • Feel free to adjust the spice by adding more or less Cajun seasoning and crushed red pepper flakes.
  • For a lighter version, you can use less butter and olive oil.
  • This dish can be paired with a side salad for a complete meal.
