Description
Churro Cookies Puff Pastry Caramel are delightful sweet treats made from flaky puff pastry, filled with soft caramel, coated in a cinnamon sugar mixture, and served with a rich chocolate ganache.

- 490 g frozen puff pastry, thawed
- 9 soft caramel squares
- 60 g butter, melted
- 38 g granulated sugar
- 5 g ground cinnamon
- 170 g chocolate chips
- 160 ml heavy cream
Instructions
- Preheat oven to 190°C. Line a large baking tray with parchment paper. On a lightly floured surface, unfold one sheet of puff pastry. Using a 7.5 cm round cutter, cut out circles. Repeat with the second sheet of pastry.
- Arrange half of the pastry circles onto the prepared tray. Place one caramel square in the center of each circle. Cover with remaining pastry circles and press edges together with a fork to seal.
- In a small bowl, mix sugar and cinnamon. Brush tops of assembled rounds with melted butter and sprinkle generously with cinnamon sugar mixture.
- Transfer tray to oven and bake for 15 minutes, or until pastry is golden and crisply puffed throughout.
- While cookies bake, place chocolate chips in a medium heatproof bowl. In a small saucepan, warm cream over medium heat until just simmering. Pour cream over chocolate and allow to stand for 2 minutes, then whisk until smooth. Cool slightly.
- Present churro cookies warm with chocolate ganache for dipping.
Notes
- Ensure the puff pastry is thawed completely before use for easier handling.
- For a more intense cinnamon flavor, increase the amount of ground cinnamon in the sugar mixture.
