Ingredients

- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ½ cup red onion, finely chopped
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Instructions
- In a large mixing bowl, combine chickpeas, avocado, cherry tomatoes, cucumber, red onion, feta cheese, and parsley. Gently toss together.
- In a small bowl, whisk olive oil, lemon juice, salt, and black pepper until well blended.
- Pour the dressing over the salad mixture and gently toss to coat evenly.
- Serve immediately or chill before serving for enhanced flavors.

- This salad can be made ahead of time and stored in the fridge for a few hours.
