  • 1/2 cup cherry tomatoes, halved (optional)

Instructions

  1. Prepare Stuffing Waffles: Preheat the waffle iron. In a large bowl, combine bread cubes, celery, onion, parsley, sage, thyme, salt, and pepper.
  2. In a separate bowl, whisk eggs, chicken broth, and melted butter; pour over bread mixture and toss until evenly coated and moist but not soggy.
  3. Lightly grease the waffle iron, spoon about 1 cup of mixture onto the center, close iron, and cook for 5 to 8 minutes until golden and crisp.
  4. Repeat to make eight waffles and transfer to a wire rack to cool slightly.
  5. Cook Chicken: Slice chicken breasts horizontally to create four thin cutlets. Rub with olive oil, salt, pepper, and garlic powder. Grill or pan-sear over medium-high heat for 4 to 5 minutes per side until internal temperature reaches 165°F (74°C). Let rest, then slice.
  6. Prepare Caesar Salad Filling: Toss chopped romaine with Caesar dressing and grated Parmesan cheese until evenly coated. Add cherry tomatoes if desired.
  7. Assemble Sandwiches: Place one stuffing waffle on a plate, layer with sliced chicken breast, a generous scoop of Caesar salad filling, and shaved Parmesan cheese. Top with another stuffing waffle and finish with freshly ground black pepper.
  8. Repeat to make four sandwiches and serve immediately.
