Description

These breakfast sandwiches are perfect for making ahead and freezing, ensuring you have a hearty meal ready for busy mornings.


Ingredients

  • 1 tsp Italian blend herbs
  • 1 tsp powdered garlic
  • 1 lb mild breakfast sausage, ground
  • ½ tsp crushed chili flakes
  • 1 lb ground beef
  • 1 tbsp light brown sugar
  • 1 tsp onion powder
  • 1 tsp white ground pepper
  • ¼ cup milk (optional, gives fluffiness)
  • 1 tsp salt
  • 12 large eggs
  • 2 tablespoons melted butter
  • 6 slices of your favorite cheese
  • 6 English muffins
  • Maple syrup (if desired)

Instructions

  1. Whisk the eggs together with milk and seasonings. Line a 33×23-cm (13×9-inch) baking pan with parchment and grease it. Pour the mixture in and bake for 20 minutes at 175°C (350°F).
  2. Mix sausage, beef, and seasonings thoroughly. Shape into 140–170-gram (5–6-ounce) patties, leaving them bigger than the muffins since they shrink when cooked. Fry in a hot, oiled skillet for 5–6 minutes per side.
  3. Spread melted butter on the muffins and toast them. Add maple syrup if you’re using any.
  4. Put together your sandwiches with the toasted muffins, cheese, butter, and sausage patties.
  5. Wrap the finished sandwiches in parchment or plastic wrap, then seal in a ziplock bag if freezing.

Notes

  • Consider using whole grain English muffins for a healthier option.
  • Freeze the sandwiches for up to 3 months.
  • Reheating instructions: Microwave for 1-2 minutes or bake in the oven at 350°F until warmed through.
