A delicious and hearty breakfast option featuring grilled cheese sandwiches filled with scrambled eggs and breakfast sausage.

- ½ pound ground breakfast sausage
- 6 large eggs, beaten
- 8 slices Colby-Jack cheese
- 4 tablespoons soft butter, divided
- 8 slices sourdough bread
Instructions
- Cook and crumble the ground breakfast sausage in a large non-stick skillet until no longer pink. Transfer to a medium paper towel-lined bowl and set aside.
- Melt 2 tablespoons of butter in the same skillet over medium-high heat. Pour in the beaten eggs and stir gently until nearly set, then remove from heat.
- Add the scrambled eggs to the bowl with the sausage and stir to combine.
- Wipe the skillet and heat over medium heat. Butter one side of each slice of bread.
- Place one slice of bread butter side down in the skillet, add one slice of cheese, scoop about ½ cup of the sausage-egg mixture on top, add another slice of cheese, and finish with another slice of bread butter side up.
- Cook until the bottom is golden brown (about 3-4 minutes), then flip and cook the other side until golden brown.
- Remove the sandwich, cut in half if desired, and repeat with remaining ingredients.
- Serve immediately.
Notes
- Feel free to add vegetables like spinach or bell peppers for extra flavor.
- Use any cheese of your choice for a different taste.
