Description

A delicious and hearty breakfast option featuring grilled cheese sandwiches filled with scrambled eggs and breakfast sausage.


Ingredients

  • ½ pound ground breakfast sausage
  • 6 large eggs, beaten
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter, divided
  • 8 slices sourdough bread

Instructions

  1. Cook and crumble the ground breakfast sausage in a large non-stick skillet until no longer pink. Transfer to a medium paper towel-lined bowl and set aside.
  2. Melt 2 tablespoons of butter in the same skillet over medium-high heat. Pour in the beaten eggs and stir gently until nearly set, then remove from heat.
  3. Add the scrambled eggs to the bowl with the sausage and stir to combine.
  4. Wipe the skillet and heat over medium heat. Butter one side of each slice of bread.
  5. Place one slice of bread butter side down in the skillet, add one slice of cheese, scoop about ½ cup of the sausage-egg mixture on top, add another slice of cheese, and finish with another slice of bread butter side up.
  6. Cook until the bottom is golden brown (about 3-4 minutes), then flip and cook the other side until golden brown.
  7. Remove the sandwich, cut in half if desired, and repeat with remaining ingredients.
  8. Serve immediately.

Notes

  • Feel free to add vegetables like spinach or bell peppers for extra flavor.
  • Use any cheese of your choice for a different taste.
