- 2 tablespoons rice vinegar
- 1 tablespoon sugar

- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- ½ cup blueberries (fresh or frozen)
- For the Sushi Roll Assembly:
- 4 sheets of nori (seaweed)
- 1–2 tablespoons of coconut flakes (optional)
- Additional blueberries for garnish
Instructions
- Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce to low heat, cover, and simmer for about 20 minutes. Once cooked, remove from heat and let it sit covered for an additional 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice to season it.
- Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined. Gently fold in the blueberries.
- Assemble the Sushi Rolls: Place a bamboo sushi mat on a flat surface and lay a sheet of nori on top, shiny side down. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Spoon a line of the cheesecake filling across the center of the rice. Starting from the bottom, carefully roll the sushi mat away from you, pressing gently to form a tight roll. Use a sharp knife to slice the roll into bite-sized pieces.
- Garnish and Serve: Arrange the sushi rolls on a serving platter. Sprinkle coconut flakes on top for added texture and flavor. Garnish with additional blueberries for a pop of color.
