Instructions

  1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce to low heat, cover, and simmer for about 20 minutes. Once cooked, remove from heat and let it sit covered for an additional 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice to season it.
  2. Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined. Gently fold in the blueberries.
  3. Assemble the Sushi Rolls: Place a bamboo sushi mat on a flat surface and lay a sheet of nori on top, shiny side down. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Spoon a line of the cheesecake filling across the center of the rice. Starting from the bottom, carefully roll the sushi mat away from you, pressing gently to form a tight roll. Use a sharp knife to slice the roll into bite-sized pieces.
  4. Garnish and Serve: Arrange the sushi rolls on a serving platter. Sprinkle coconut flakes on top for added texture and flavor. Garnish with additional blueberries for a pop of color.
