Bacon Cranberry Brie Chicken is a delicious and easy-to-make dish featuring tender chicken breasts stuffed with creamy brie cheese and tangy cranberry sauce, all wrapped in crispy bacon.

- 2 boneless, skinless chicken breasts
- Salt, to season
- Black pepper, to season
- 110–170 grams brie cheese, sliced
- 4 tablespoons cranberry sauce
- 6 slices bacon
Instructions
- Preheat oven to 200°C. Line a baking sheet with parchment paper.
- Using a sharp knife, cut each chicken breast partially in half lengthwise to create a pocket, ensuring not to slice completely through.
- Season both sides of the chicken breasts with salt and black pepper.
- Evenly divide brie cheese and cranberry sauce between the breasts, placing the filling in the pocket created.
- Close chicken breasts and tightly wrap each with 3 slices of bacon, overlapping to secure the filling. Use toothpicks to hold in place if necessary.
- Transfer the wrapped chicken onto the prepared baking sheet. Bake in the preheated oven for 20–25 minutes until the bacon is crisp and the chicken is thoroughly cooked.
- Remove from oven and rest chicken loosely covered with foil for 5 minutes before serving. Remove toothpicks prior to plating.
Notes
- For added flavor, consider marinating the chicken breasts for a few hours before preparing.
- Ensure the internal temperature of the chicken reaches 75°C to ensure it’s cooked through.
