Description

Irresistibly delicious almond flour chocolate muffins that are easy to make and perfect for a healthy snack.


Ingredients

Scale
  • 280 g almond flour
  • 50 g unsweetened cocoa powder
  • 1 1⁄2 tsp baking powder
  • 2 large eggs
  • 120 g xylitol
  • 100 g Greek yoghurt
  • 1 tsp vanilla extract
  • 120 g dark chocolate chips

Instructions

  1. Preheat the oven to 190C / 170C fan / 375F and line your muffin tray with 9 cases.
  2. Combine the almond flour, cocoa powder, baking powder, and xylitol in a large bowl and mix.
  3. In another bowl, using an electric whisk or stand mixer, beat the eggs, Greek yoghurt, and vanilla extract until it is pale yellow and airy.
  4. Fold the wet and dry ingredients together being careful not to overmix as you want to keep as much air in as possible.
  5. Gently fold in 100g of the chocolate chips.
  6. Using a large cookie scoop, spoon the dough into the muffin cases. Sprinkle with the remaining 20g of chocolate chips.
  7. Bake in the preheated oven for 25-30 minutes and leave to cool.

Notes

  • Make sure not to overmix the batter to keep the muffins light and airy.
  • Use high-quality dark chocolate chips for the best flavor.
  • You can substitute xylitol with another sweetener if desired.
