Irresistibly delicious almond flour chocolate muffins that are easy to make and perfect for a healthy snack.
Ingredients

- 280 g almond flour
- 50 g unsweetened cocoa powder
- 1 1⁄2 tsp baking powder
- 2 large eggs
- 120 g xylitol
- 100 g Greek yoghurt
- 1 tsp vanilla extract
- 120 g dark chocolate chips
Instructions
- Preheat the oven to 190C / 170C fan / 375F and line your muffin tray with 9 cases.
- Combine the almond flour, cocoa powder, baking powder, and xylitol in a large bowl and mix.
- In another bowl, using an electric whisk or stand mixer, beat the eggs, Greek yoghurt, and vanilla extract until it is pale yellow and airy.
- Fold the wet and dry ingredients together being careful not to overmix as you want to keep as much air in as possible.
- Gently fold in 100g of the chocolate chips.
- Using a large cookie scoop, spoon the dough into the muffin cases. Sprinkle with the remaining 20g of chocolate chips.
- Bake in the preheated oven for 25-30 minutes and leave to cool.
Notes
- Make sure not to overmix the batter to keep the muffins light and airy.
- Use high-quality dark chocolate chips for the best flavor.
- You can substitute xylitol with another sweetener if desired.
