- 1/3 cup almond butter
- 3.5 ounces dark chocolate (60-70% cocoa), chopped
- 1 tablespoon coconut oil
- 1 tablespoon chopped toasted almonds (optional)
- Pinch of sea salt flakes (optional)
Instructions
- Prepare and Slice Bananas: Peel bananas and cut them into uniform 1/2-inch rounds.
- Assemble Banana Sandwiches: Spread approximately 1/2 teaspoon almond butter onto half the banana slices, then sandwich with the remaining slices.
- Freeze Assemblies: Arrange banana sandwiches on a parchment-lined baking sheet and freeze for 45 minutes until firm.
- Melt Chocolate Coating: Place chopped dark chocolate and coconut oil in a microwave-safe bowl; heat in 20-second intervals, stirring between each, until fully melted and smooth.
- Dip and Garnish: Using a fork, dip each frozen banana bite into the melted chocolate to coat. Sprinkle with chopped almonds and a pinch of sea salt while chocolate is still wet.
- Final Freeze and Serve: Return bites to the lined tray and freeze another 20 minutes, or until chocolate sets. Serve frozen or slightly thawed.
Notes
- For an extra crunch, use more chopped almonds as a topping.
- This treat can be stored in the freezer for up to a week.
